Meat fibers are tough parallel tubes held together by connective collagen. When you cut parallel to the grain, your teeth have to grind through long rubber-like ropes. When you slice perpendicularly against the grain, you pre-cut those long ropes into tiny fractions of an inch, meaning almost zero chew resistance.

Flank steak has grain running lengthwise along the long edge of the cut. Skirt steak (diaphragm muscle) has fibers running across the short width. In the masterclass, we illustrate how slicing each cut requires an entirely different initial partition.

You do not need an expensive artisan knife, but you do need a sharp knife with a blade of at least 8 to 10 inches (a chef's knife or slicing/carving knife). A dull blade crushes the muscle fibers and forces juices out instead of cutting cleanly.
